Tips for Building a Better Burger

Start with the right cooking surface.
The first American hamburgers were cooked on flat tops, making a griddle or cast-iron skillet the best choice for developing the flavorful crust that defines a smash burger.

Think beyond ketchup.
One of the most distinctive parts of the American Legacy Burger is its red relish. Inspired by conversations with George Motz, Chef Gavin learned that red relish predates ketchup on many early American burgers. Instead of squeezing ketchup directly onto the bun, this recipe blends ketchup, chili sauce and sweet relish into one balanced condiment.
